Fast and Easy Lentil Chili

A quick, high-protein, high-fiber bowl with zero added sugar.

One serving of lentil chili

One serving of lentil chili.

This is my go-to when I want something warm and filling that still hits my macros. Lentils and TVP carry the protein, quinoa and cinnamon round it out, and it comes together in one pot in about the time it takes the TVP to rehydrate. No added sugar, plenty of fiber, low in calories but still very filling, and it reheats well if you want to make it ahead.

Makes 2 servings, 1½ cups each.

Ingredients

  • 1 cup cooked green or brown lentils
  • ¼ cup dry TVP (textured vegetable protein)
  • 1 can (14–15 oz.) diced tomatoes
  • ½ cup cooked quinoa
  • Dash of cinnamon
  • 2 tablespoons chili powder, or to taste
  • Water, to thin to desired consistency (approx. ¼–½ cup)

Directions

  1. Combine the diced tomatoes, lentils, TVP, quinoa, cinnamon, and chili powder in a pot over medium heat.
  2. Cook, stirring occasionally, until the TVP is rehydrated and everything is heated through — adding water as needed to thin to your desired consistency.

Zhuzh It Up

Want to make it your own? Try adding:

  • Shredded vegan cheese
  • Vegan sour cream
  • Veggies of choice
  • Beans of choice
  • Use seasoned canned tomatoes instead of plain to add depth of flavor; for example, a can of Rotel, etc.
  • Adjust/alter spices and seasonings to your taste
  • If you aren't concerned with added sugar, you can add a tablespoon of brown sugar to bring out the flavor

Keep in mind that any additions will alter the nutritional profile, so plan accordingly.
